Ingredients

  • 2 cups black beans, dried or 5 cans cooked (16 oz)
  • 6  cans (14.5 fl oz) chicken or vegetable broth
  • 4 stocks celery, chopped
  • 1 carrot, chopped
  • 3 onions, sweet chopped
  • 2 tbsp sea salt
  • 2 tbsp coconut oil
  • 1 tbsp onion powder
  • 1 teaspoon black pepper
  • 4 springs parsley chopped
  • radishes sliced
  • 8 cloves garlic, crushed
  • bell peppers (green & red) – chopped
  • 1 jalepeno pepper – seeds removed, chopped

InstaPot – Pressure Cooker setting: add washed black beans, chicken broth, celery and carrots. Cook 15 minutes.

Soup pot (3 quart) – at medium heat, add 2 tbsp of coconut oil and onions. Cook 5 minutes. Add bell peppers and jalepeno, cook 5 minutes. Add garlic. Cook until onions are translucent and browned.

Vita-mix: Place items from soup pot in vita-mix and puree. Return back to soup pot. Place contents of InstaPot in the vita-mix and also puree (if too thick add chicken broth). Add to the soup pot.

Cook in soup pot 15 minutes. Add salt and pepper. Serve with parsley and radishes as garnish.
